Carrots are one of my favorite ingredients to keep on hand in the kitchen. They have a ton of fiber and you can use them in everything from cookies and cakes to stirfry and snacks. But the biggest plus to carrots is their natural sweetness. And roasting them or otherwise trapping them in the oven, totally changes the game. Therefore, it makes complete sense to make carrot chips as a healthy replacement for deep fried potato chips.

Cajun Carrot Chips

Ingredients:
  • 2 carrots, thinly sliced into rounds
  • 2 teaspoons coconut oil or oil choice
  • cajun seasoning
Directions: Preheat the oven to 350 F. Slice carrots and place on a baking sheet with a Silpat or parchment paper. Add coconut oil and spices to the carrots and combine. Bake 20 minutes or until crispy. You NEED to watch these carefully. They can easily burn and your oven is likely different. I found my cooking times definitely differed and needed a lower temperature than existing recipes. Your carrots will be ready when they are crisp.
