Some things just need a good condiment. Like the kind of condiment that you can put on basically any grain or veggie and make it so far beyond basic edible it's ridiculous. Cuban sauce is that condiment. It's high fiber, clean eating goodness that takes three veggies, vinegar and creates a masterpiece in the blender. (Don't worry, they used condiments.)

Cuban Sauce

Ingredients

  • Celery, 2 ribs
  • Carrot, 2 carrots
  • Onion, 1/2 yellow onion
  • Garlic, 2 cloves
  • Cider Vinegar, 1/4 C
  • Olive Oil, 1/8 C
  • Sugar, 2 t

Directions: Rough chop the celery, carrot, onion and garlic. Place it in a blender (a Vitamix is perfect for this job) and pulse. Add the vinegar, oil and sugar and pulse once more. The consistency should be thick with individual colors still visible throughout the sauce.

Cuban sauce is bitey, sweet and it will definitely have you trying to find something else to put it on.
