I have a serious soft spot for peanut butter and chocolate in tandem. Come to think of it, I think soft spot is kind of an understatement. We may be well into the long term affair phase. While the grocery stores are stocking Cadbury and Reeses eggs, I can't let myself eat more than one of those per year. There's just so much artificial all in a single wrapper. So in an effort to find a healthier replacement, I ended up making...a really healthy replacement. And we love these stocked in the freezer! These are also one of the snacks I suggest to my wedding wellness and weight management clients. These creamy egg shaped bites are filled with amaranth, chocolate protein packed Vega powder, peanut butter, walnuts and of course chia seeds. They have so much protein and fiber paired with the crave-able chocolate peanut butter combo, there's no reason to go back to packaged.

Chocolate Chia Peanut Butter Eggs

Ingredients:

  • 1/4 C peanut butter
  • 1 C cooked amaranth
  • 1.5 scoops Vega chocolate protein powder THIS kind 
  • 1.5 C walnuts, chopped finely in a food processor
  • 1/4 C chia seeds

Directions: Cook amaranth and allow to cool. Stir in warmed peanut butter. In a food processor, blend vega, walnuts and chia seeds to a fine texture. Pour the walnut blend into the amaranth. Stir to combine. Scoop with a small spoon and mold in hand. Freeze on a tray and store in a sealable container.
