With those leftover fresh cranberries from the cranberry cornbread cakes, we needed an appropriate holiday apéritif. I love the spunk of ginger and the brightness of mint. This mo-ho-ho-jito (I'm proud of this one, so humor me.) is without the normal added sugar of most mojitos.

  

Cranberry Ginger Mo-ho-ho-jito

Ingredients:

  • 2 oz 100% cranberry juice
  • 4 oz ginger beer
  • seltzer water to fill
  • 1.5 oz rum
  • fresh mint
  • fresh cranberries

Directions: Add juice and rum to your drinking vessel. Crush mint leaves to add. Pour in ginger beer and fill the remainder with seltzer. Drop in fresh cranberries. 

   The original cocktail that was mixed left out the seltzer using only ginger beer as a mixer. Holy cow, that stuff is potent. As someone who can't deal with a lot of spunk and spice, I advise you to either not inhale while drinking the seltzer-less version, or mixing to your tolerance level.  The 100% cranberry juice is a must. Please don't use cranberry cocktail and taint this beautiful drink. Real cranberry juice is super tart and perfect for this cocktail.
